Venturing north and west of Denver to the lovely town of Boulder is always worth it when on the lookout for gluten-free, hassle-free dining options. There are more restaurants with dedicated gluten-free kitchens in Boulder than anywhere else in the state of Colorado, and Shine Restaurant and Gathering Place...well it shines. Owned and operated by three sisters with a commitment to delicious, gluten-free eating, it is WELL worth the jaunt to Boulder. Shine is located south of Spruce Street on 13th, just a few steps from the Pearl Street Mall. Their menu is well thought out, healthy, and delicious, and draws from local ingredients. Shine has a full bar and they brew their own beer, which is NOT gluten-free, but the kitchen is completely separate from the brewery. In addition to amazing food, Shine Restaurant is also a Gathering Place, with space for events apart from the dining room. Check out their website for the latest menus, as well as events scheduled.
