Boulder is a magical place full of all kinds of restaurants that celiacs can enjoy. Fresh Thymes is one such restaurant delivering magic. It is an ingredient-conscious eatery that has been around since 2013, and the intro on their website says it all:

Gluten Escape Bakery Deby’s Gluten-Free Gluten Free Things Sweet Escape Pastries Kim and Jake’s Gluten-Free Aime’s Love Bakery Sweet Deliverance Bakery Located just around the corner from the flagship REI store downtown, Just BE Kitchen opened in spring of 2017 with a mission to nourish Denver with grain-free, paleo food that rocks. It is a fast casual concept that as they describe it, serves “mindful mouthfuls”. And they do a great job! Just Be Kitchen is open for breakfast and lunch, and each item on the menu has been thoughtfully selected and paired with the perfect gluten-free ingredients to provide a delicious, nutritious experience. The menu is divided into “Just Beginnings” and “Just Be Awakened” - cold and hot breakfast options, “Just Be Comforted” - a bone broth bar, and “Just Be Satisfied”, with creative lunch options. And yes, Pork Green Chili is among one of those options (when is the last time you saw THAT gluten-free?). The light and airy decor gives the impression that you are doing something good for yourself by being there. Just Be Kitchen is open 7 days a week from 7:00am to 3:00pm.

There are more restaurants with dedicated gluten-free kitchens in Boulder than anywhere else in the state of Colorado, and Shine Restaurant and Gathering Place...well it shines. Owned and operated by three sisters with a commitment to delicious, gluten-free eating, it is WELL worth the jaunt to Boulder. Shine is located south of Spruce Street on 13th, just a few steps from the Pearl Street Mall. Their menu is well thought out, healthy, and delicious, and draws from local ingredients. Shine has a full bar and they brew their own beer, which is NOT gluten-free, but the kitchen is completely separate from the brewery. In addition to amazing food, Shine Restaurant is also a Gathering Place, with space for events apart from the dining room. Check out their website for the latest menus, as well as events scheduled.

Nestled in a little courtyard just off the busy street, Mmm Coffee! is a little oasis from the busy city traffic. And so tasty! Everything in this little bistro is gluten-free, from the cookies and muffins behind the glass to the salads and savories they offer for lunch. And if you are looking for a birthday cake or cookies to bring to a party, give them a few days notice and they’ll make you a fantastic creation!

That is Five on Black's online introduction to the world. Setting some pretty serious expectations there! But after having visited on several occasions for lunch, I have to agree- it really is happiness in a bowl. Five on Black has a very similar layout to Chipotle, with the lunch assembly-line setup, but instead of burritos Five on Black’s bowls burst with the bold flavors of their creative ingredients- like savory collard greens and sweet potato. The sauces further pack a savory punch and complement each one of the other ingredients in the bowl. Garnishes at the end of the lunch line include avocado, cilantro, limes and a powder that most people with celiac would look at with suspicion. But fear not! It is farofa, which is simply toasted cassava flour combined with a mixture of spices including salt, black pepper, onion, garlic, and chive. Complement your bowl with Pao de Queijo, Brazilian cheese bread, or a Brazilian coffee cookie (both gluten-free), and you have one solid lunch plan. There are locations in Denver and Boulder- the Denver restaurant is just east of the 16th street mall on California, and the Boulder one is in the strip mall on the northeast side of 28th and Canyon Blvd.
